This coffee comes from Finca Lerida, in the Alto Quiel region, at 1,800 meters above sea level. The best cherries were selected through floatation, then depulped and placed in fermentation tanks for 48 hours. After fermentation, the beans were removed and placed in baskets in a cold room with the temperature controlled at 20C for 24 days.
